Hasselback Sweet Potatoes

These Hasselback Sweet Potatoes are one of my absolute favorite ways to prepare sweet potatoes. The preparation is fairly simple — just like making baked sweet potatoes but there is the additional step of styling them in their Hasselback-fashion. 

Sweet potatoes aren’t the only time you can use this Hasselback technique. I’ve done it on a number of different kinds of potatoes as well as apples, too! To add some additional flavor to these babies I topped them off with chives and surrounded them with chopped green apples and tomatoes. 

So how do you make these Hasselback Sweet Potatoes? 

Ingredients

  • 3 medium sweet potatoes

  • 1 tbsp olive oil

  • 1 teaspoon finely chopped fresh chives

  • 1 green apple

  • 1/2 cup grape tomatoes

Directions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

  2. Wash and dry the sweet potatoes of your choice.

  3. Make a series of 1/8-inch slices along with each potato, slicing 2/3 of the way through.

  4. Chop up the apple and tomatoes. 

  5. Place the sliced sweet potatoes on the baking sheet and surround them with the chopped up apples and tomatoes. Add the chives between the folds of sweet potatoes.

  6. Roast until the center of the potatoes are tender and the outside is crisp, 50 minutes to 1 hour. Halfway through the roasting time, remove the potatoes from the oven and run a fork gently across the tops of the potatoes, using light pressure, to fan the slices and separate them from one another. Reapply some olive oil if needed.
