Pumpkin Fudge Protein Bread

The best healthy pumpkin bread made with a protein powder of your choice! This cozy, healthy pumpkin bread recipe is loaded with pumpkin and Chocolate Fudge protein. It’s perfectly moist, topped with the most addictive maple glaze, and can easily be made into pumpkin muffins!

Pumpkin Fudge Protein Bread

Ingredients

1 cup pumpkin

1/2 cup Greek yogurt 

⅓  cup Chocolate Fudge Protein

1 large egg

1/3 cup melted coconut oil

3/4 cup coconut palm sugar

1 teaspoon baking soda

1/4 teaspoon sea salt

2 teaspoons ground cinnamon

1 teaspoon pumpkin pie spice

1 cup almond flour

1/2 cup coconut flour (blended up old fashioned oats)

1/2 cup chocolate chips 



Instructions

Preheat the oven to 350 degrees F. 

Cover a bread pan with parchment paper and set aside.

In a large bowl, stir together the pumpkin, Greek yogurt, egg, vanilla, coconut oil, and coconut palm sugar until well combined.

In another bowl, stir together the protein powder, baking soda, salt, cinnamon, pumpkin pie spice, and flour. 

Mix the wet and dry together.

Stir in chocolate chips.

Pour into the prepared bread ban and bake for 45 minutes.
