Keto Pumpkin Pancakes

1 cup almond flour

¼ cup organic pumpkin

2 eggs

1 TBSP Monk Fruit Sweetener

¼ cup water

2 tbsp coconut oil

2 tsp cinnamon



Mix together the almond flour, pumpkin, eggs, monk fruit sweetener, water and melted coconut oil.

Note: Leave out the egg whites and mix them with a hand mixer separately -- add in later with spoon to create more fluffy pancakes.

Scoop heaping tablespoons onto pan and cook on medium heat, flipping each pancake once to cook each side.
